First off, i would like to apologize for the lack of posting over the last month or so. School has been very stressful (as usual) but today i decided to pick up my laptop again, and start blogging!
As most of you know, today is super bowl sunday! I am not a very big football fan and in my family Super Bowl Sunday is more for the guys than the girls but we can enjoy it too!
I've spent my whole morning making football cupcakes (my way of enjoying a day full of football) and i am very happy with how they turned out so i thought i would share the will all of y'all!
I was looking through Pinterest this morning when I saw a cute picture of about 20 football cupcakes, so i can't say i came up with the idea or the recipe!
The cupcakes are vanilla with chocolate frosting and the stitches are vanilla.
I found the vanilla cake recipe online (http://www.foodnetwork.com/recipes/food-network-kitchens/vanilla-cupcakes-recipe2.html) I KNOW! NOT CREATIVE! But, the cake tastes amazing! They are perfectly moist and the tops are a bit crispy, PERFECTION!! I suggest adding more sugar than the recipe calls for!
I did, however, make the frosting without any help from the world-wide web!
MMs Homemade Chocolate Butter Cream Frosting:
INGREDIENTS:
1 cup of powdered sugar Thats right! Only THREE ingredients!
1/2-1 cup of butter Step One: Put the butter in the stand mixer on low-medium for 3 minutes
3 teaspoons of milk or until whipped.
1 dash of vanilla extract
Step Two: Slowly add in the powdered sugar (so it doesn't fly everywhere) and bring up the speed to medium-low for another 3 minutes
Step 3: add in the vanilla
FOR CHOCOLATE FROSTING:
separate 1/4 of the vanilla and use the other 3/4 for the chocolate
Step 4: melt about 1 cup of semi sweet chocolate chips in the microwave for 1 minute. Put the melted chocolate in the freezer for 45 seconds and then mix into the 3/4 of vanilla frosting
This is possibly the easiest chocolate butter cream frosting there is.
After the cupcakes cooled i frosted each one with chocolate frosting using one of those frosting cake knife things (??)
I then put the vanilla frosting in a piping bag with a thin tip. Each cupcake looked like this:
I have to be honest with you; I wasn't quite sure what a football looked like!
I hope all of you have fun watching the big game while shoving chicken wings down your throat (and maybe some football-looking cupcakes?)
